Asian Turkey Meatballs, Noodles & Veggies (Tasty Tuesday)

Can we step back for a moment – and talk about this weekend.
We traveled to my parents place – to meet our new niece, who was born on Jan. 9th. 
Oh man, is she itty bitty!  I don’t have a picture of her – but trust me, she is tiny!  I mean, her weight is a normal birth weight – but she just looks so tiny!  I can’t ever remember baby girl being that small – and baby girl weighed less than a pound more than her. 
Can we also talk about the football games that occurred this weekend? 
UGH! 
Seriously – both the teams I am cheering for lose?!  By three points?!  Ridiculous! 
So now, the Giants vs Patriots in the Superbowl.  Who do I cheer for?!  The team I hate and cannot stand to watch – or the team that took the Packers out of the playoffs (though, I think the Packers kind of took the Packers out of the playoffs). 
Guess I’ll be cheering for the Giants – since I literally want to drop-kick everyone on the Patriots team. 

Moving on to tonight’s dinner…
I’ve made this once before and it was delicious. 
I thought since it was the new year – I’d bring the recipe back and update it a little.
Asian Turkey Meatballs and Spicy Thai Noodles with Veggies. 

Yum!  I may have kept the meatballs in the oven a little too long – but the inside was still nice and moist!  I kind of love the crunchy outside!

The only changes I made to either of the recipes – is adding red pepper flakes into the meatballs – and leaving the pepper flakes in the noodles – (I didn’t strain the oil after warming up). 
So delicious!  A little more spicy – but I love it!

Green Smoothie for Baby Girl

So the other day I made a green smoothie for breakfast.

Clearly, baby girl wanted some. 
She couldn’t have mine – since it had peanut butter and cows milk in it. 
But, I figured I could make some for her with just spinach, banana and water.

So, I mixed up a batch for her.   Gave some to hear right away, it was too thick for her to drink from a sippy, yet too runny to spoon feed her.  So I decided to pour it in an ice cube tray and freeze it.

Then I remembered seeing something at the store that I had wanted to pick up for her, but never did. 
It’s a fresh fruit mesh.  Where you put fresh fruit in, and babies can chew on the mesh part.  So you don’t have to worry about baby choking on pieces of fruit.  You can also put frozen fruit or ice cubes in there for baby to chew on, to help relieve their gum pain during teething.
Hubby picked one up after work the other night – and the next day we tried it out.

I cut the green smoothie ice cubes in half so they fit in the mesh.
Baby girl loves it! 

She would chew and chew and chew on it. 

Definitely think it helped soothe her gums.

And, like any baby enjoys, she got to make a big old mess! 

Oh, and the best part… she gets to eat some great fruit and veggies!

Today I mashed some of the cubes up – into a little icy. 

It melted very quickly, but baby girl seemed to enjoy it this way too.  The mesh is much better for her gums though.

This is the best way to start a morning off.

Winter Has Reached Wisconsin

Well, it happened.  The first major snow fall of the season.  I’d say it started around 11am, and has been snowing every since.
My only problem with this snow, is that it’s the light/slick snow.  I would prefer the big ol’ puffy flakes. 

Today has been a lazy day (go figure).  I haven’t been feeling well.  Woke up with a scratchy throat and a cough.  And just felt exhausted. 
I slept off and on until about 2pm.  I know!   
I feel better at the moment.  Just tired… but you know… I’m always tired, so really it isn’t anything new.

I hate when I feel sick, because I just want to do nothing and basically eat everything within my sight.  Not cool.  Same things happen when I get very little sleep. 
So needless to say, I’ve been eating everything I can get my hands on. 
Thankfully my stomach only allows so much, or I would have gained 20 pounds in these last few days!

But I didn’t.  I gained nothing!  Though, the losing part isn’t working at the moment.

The other day I made a weekly calendar printout.  Not really sure what I want to include in each section – but I do have a section that has five glasses of water.  Makes it much easier to track my intake when I can cross each off after I finish them. 
I would like to say… Yesterday I drank 80 ounces of water!  Woot!! 
Today…. not so much.  I’m half way there.  And since my days don’t end until about 2am… I’d say I have plenty of time to get the rest in.

Honestly, I’m spent.  I’m going to attempt some yoga… then curl up with my Kindle.
