Birthday Cupcakes!

Today is my hubby’s birthday.
We celebrated a little early (yesterday), since he has to work today.

Baby girl enjoyed her half a cupcake very much.
And by very much… I mean..
Very Much.

 She had chocolate all the way up her arms.
And all over her face.
And most of the cupcake landed on the floor.
But all the frosting ended up in her mouth.
She went right off to a bath after this.

Hubby requested his flavor of cupcake.
I happily obliged.
And I got to break out my cupcake icing kit I got for Christmas.
It is amazing!
I mean, seriously, look at that frosting!

If I do say so myself… It is my best yet!
Hubby requested a vanilla cupcake with raspberry filling and chocolate frosting.

And that is what he got.
It was so delicious.
I honestly think it got better after a few days.
I gave half to his parents when we saw them on Saturday.
That way, we didn’t eat 24 of them ourselves.

Anywho – birthday cupcake number one is a success!
Number two will be for baby girl’s birthday at the end of March.
I am so looking forward to using my icing kit again!

Mmmm, Honey..

Good news!
I woke up today feel great.
Well, I was tired… but that is due to womanly issues.
But my muscles weren’t screaming at me. 

I’ve been starving when I get up in the morning these past few days.
Typically I can wait an hour or two before my stomach starts grumbling at me.
Not this week.
This week, as soon as I get out of bed my stomach is saying “feed me!” 
So, I did. 
Slightly same breakfast as earlier this week.

Peanut butter and honey toast, strawberries, chai latte and water

Back in the day (when I was pregnant), I would eat peanut butter and honey toast for breakfast every morning.
I needed something in my stomach – because I was so nauseous upon waking.
This was the only thing I could keep down for breakfast. 
Nine months of peanut butter and honey toast…. gets old. 
*Fun fact: I would never eat upon waking.  I would suffer through the nausea while taking a shower.. then I would eat breakfast. Even though I would gag in the shower every morning I still never ate before.  Weird, I know…*

So, I haven’t had it for almost a year… 
But now it tastes good again.
And it’s just the right amount for me. 
I still can’t eat a huge breakfast…
Not a morning eater, I suppose. 

Oh. and this honey… it makes the toast so much better.

It’s like candy.  Ugh, it is so good! 

Now, if only I had that almond butter.
It tastes so much better than peanut butter.

On to more excited news today.
Baby girl took her first alone steps! 
I was shaking up her bedtime bottle, standing near the chair.
She was on the ground, playing around my feet.
She decided to climb up me – and I walked away to get her a new diaper.
She continued to stand there – all by herself (which she has been doing more and more of lately).
So, I grabbed her diaper and I turn to see her walking towards the chair (to get her bottle).
All by herself!!
She took maybe four steps. 
But it was four steps all by herself! 

After that, I wanted to see her do it again. 
So, I grabbed the bottle and held it just out of her reach.
She climbed up to standing position (holding onto the chair), and took about three steps all by herself reaching for the bottle.
I think she would have walked a little more, had she not tripped over her toy laying on the floor.

After that… she was getting super crabby, so I couldn’t get her to walk again.

Maybe tomorrow?!

Oh, she’s also been testing her boundaries a lot more.  

She climbed up on the box and started playing with the speaker.
Time to hide…. everything.


I Heart Nut Butter

Happy Valentine’s Day!
Or, as baby girl would say, “Happy First Valentine’s Day!”

Isn’t she the cutest?! 
She was my Valentine today.
So was hubby – but he had to go to work.

We finally have our computer up and running – without a virus!  Woot!
So glad to be able to log into blogger again! 

On Sunday my sister-cousin and I hung out.
We went to our usual coffee shop.
After eating some delicious food.
And drinking some delicious drinks…
We got a cupcake to share.
It was the last one there.
Chocolate with raspberry frosting.

Sounds delicious, right?!
Looks delicious.
But it wasn’t delicious.
I bet it would have been delicious had we got it the day it was made.
It was so dry – and crusty.  And it just tasted old.
Good thing to know – never order the last cupcake.
Get a cupcake that has multiple friends around.
Oh, this won’t deter me from getting another cupcake there.
The first cupcake we had was amazing.
I’m sure the chocolate, raspberry filled, chocolate frosted cupcake would have been amazing too…
But I felt that would have been too much chocolate.
Silly, I know.

After the coffee shop, we bummed around some stores.
And went grocery shopping.
I picked up more than I needed.
But all the fruits looked so delicious.

This was my breakfast yesterday morning.

Organic strawberries (which were so good), Justin’s Honey Almond Butter on whole wheat toast, and water. 
It was the first time I’ve ever tried Justin’s nut butters – and was it amazing!
Too bad they only had the single serving packet at that store.  I’ll have to find a jar – so I can enjoy the deliciousness more often.

I was craving something sweet and chocolate tonight.
So, I figured I’d use those delicious strawberries.
Mmmm. Chocolate covered strawberries.
Only, I didn’t have any chocolate.
But, I did pick up a Justin’s Chocolate Hazelnut Butter pack the other day.
So, I chopped up some strawberries and drizzled plopped the nut butter over them.

This was so yummy.
Hit the spot – and was so much better than plain old chocolate!

Now I’m sad that I have no more Justin’s Nut Butter in my house.
I need jars of nut butter! 
I need them now!

I should have told hubby to get me that for Valentine’s Day!  Haha.

Chicken Pesto French Bread

Sorry I’ve been sucking at blogging this week.
I’ve just been tired.
Well, kind of sick.
Definitely trying to kick the cold before it becomes full blown.
Today I had enough motivation to attempt to eat well.

This was my lunch.

A tasty turkey sandwich on my favorite thing ever… Thin buns!  Yum yum.
With a side of carrots. 
I want you to know, that I wanted to have a side of chips.
I even grabbed the bag.
I figured, as long as I weighed the chips out – it would be fine.
But I knew if I had chips, I would want more and more and more.
So, I pulled out some carrots and decided to go that route.

Trust me… Today was hard.
I wanted chips all.the.time. 
I really hate having them in the house.
But I can’t make hubby not eat them. 
Well, I could, but he’s a grown man – and he makes his own decisions.

I did snack on some thin pretzels.  I weighed them out though, and didn’t go overboard. 

Now, I want to talk about dinner.
I saw it over at Jamie Cooks It Up! and knew I needed to try it.

Chicken Pesto French Bread
(Adapted from Jamie Cooks It Up!)

2 french bread rolls (cut in half)
2 chicken breasts
1 tbsp extra virgin olive oil
Salt, pepper, garlic powder, onion powder
6 slices of provolone cheese

Cut chicken up into 1 inch pieces.  Heat oil in large skillet.  Add chicken and season with salt, pepper, garlic powder and onion powder.  Cook chicken until no longer white on the inside.

While chicken is cooking – spread a spoonful of pesto on each french bread piece.
Set aside on baking sheet.

Once chicken is cooked – place on top of pesto covered bread. 

Cover with 1 1/2 slices of cheese. 

Bake at 400 degrees until cheese is bubbly and bread is heated through.  About 10 minutes.

Serve and enjoy!

Oh yum yum yum!  I LOVE pesto. Probably my favorite food ever.  Pesto covered noodles is my favorite… but this is a pretty close second.  YUM! 

Go try it.  Super easy to through together, and honestly you could use any type of bread or a wrap or anything.  What about a chicken pesto pizza?!   Oh my… I may have to try that soon!

Oh and that cheese – I got the Sargento Ultra Thin Slices.  Only 40 calories per slice.  Pretty much amazing!

I’m off to catch up on some TV shows.  And read a little.  And guzzle some more water.
